丙烯酰胺改性魔芋葡甘聚糖流变性能研究

摘 要

作者以魔芋葡甘聚糖、丙烯酰胺为主要原料,通过Michael加成反应对魔芋葡甘聚糖进行醚化改性,获得了一种性能优异的新型魔芋葡甘聚糖醚类衍生物(AMKGM)。采用红外光谱、核磁共振氢谱对合成的表征,并研究了AMKGM溶液的流变学性能。结果表明:在碱性条件下成功合成了AMKGM。该醚类衍生物溶液由黏性流体向弹性流体转变的临界质量分数为4%。在极低质量分数时,AMKGM水溶液呈现出牛顿流体行为,且随着质量分数的增加,AMKGM水溶液逐渐向假塑性流体行为转变;外加盐的物质的量浓度在高剪切速率区对AMKGM溶液的稳态流动行为影响较小。频率扫描和温度扫描结果显示,随着AMKGM溶液质量分数的增加,储能模量(G')、损耗模量(G")的交点逐渐向低频区移动,质量分数为4%的AMKGM水溶液的凝胶转变温度为40℃。

Modification of Konjac Glucomannan with Acrylamide and Rheological Properties

Abstract

In this paper, konjac glucomannan( KGM) and acrylamide was used as the main materials,through Michael addition reaction, konjac glucomannan is etherified and modified, which is expected to obtain a new type of AMKGM ether derivative with excellent performance. The products were characterized by FT-IR and 1H NMR.The rheological properties of AMKGM solution were investigated. The results showed that AMKGM was successfully synthesized under alkaline conditions, and the critical mass fraction of the solution from viscous fluid to elastic fluid was 4%. At lower mass fraction, AMKGM aqueous solution presented Newtonian fluid behavior, and with the increase of mass fraction, AMKGM aqueous solution gradually changed to pseudoplastic fluid behavior. The amount of substances of added salt have little effect on the steady flow behavior of AMKGM solution in high shear rate region.The results of frequency scanning and temperature scanning showed that the intersection of storage modulus(G') and loss modulus(G") gradually moved to the low frequency region with the increase of mass fraction of AMKGM solution, and the gel transition temperature of 4 wt% AMKGM aqueous solution was 40℃.
